I’m building a parrot cage out of mesh, and I’m going to attach them together with cable ties. Is there anything better to attach them with? Something really strong so that my quakers can not escape.

Quakers will eat the cable ties in a heart beat. Don’t use them. You will have to use a heavy guage wire and make sure there are no pointy or sharp ends poking out anywhere because it can cause injury. They will definitely chew right thru a cable tie no matter how heavy it is. We attached some food bowl temporarily in some of the quaker pens here at work, and they chewed thru them in less than an hour. Please read my profile
Mesh what? Metal? If you’re using metal, you need to be extremely careful that it’s not galvanized wire — zinc poisoning will sicken and kill your bird before you realize what’s happening.
You can get special rings called "hog rings" at your local hardware store. You will also need a special pair of pliers to close the rings. I don’t think Home Depot or Lowe’s carry them. And be sure you aren’t using the mesh called "hardware cloth" or "chicken wire." The birds can chew through the fine wires easily, and the chicken wire has openings too big – birds can stick their heads through and get hurt.
