Amazons are one of the highest rehomed birds at maturity. They become very aggressive. Keep that in mind. It is going to take a lot of time for you to deal with this. The one sure way is to divide her food into 4 or 5 servings and everytime you walk by the cage, give her food. Soon it will associate you to food and that you mean no harm. Then try to handle her little by little. Start out with a stick and gradually shorten the stick lenght until you can pet her.

All this will take time but it is well worth it.

get a good set of sturdy gloves and try to keep her in the room with you as much as possible and try to hold her if she lets you. since you have only had her for a week she may just be getting used to you or it could be she was abused by previous owners. Getting an abused parrot is like taking in an abused child. Give it time, she will come around just be patient and don't ever lash out at her.
